Nicole Murphy primarily represents the university system’s hospitals and clinics, medical schools, and health professionals since joining the Office of the General Counsel in 2025.
Prior to joining the University, Nicole provided general counsel and managed legal affairs of both public and private multinational corporations supporting food ingredients (barley rice protein, starches and sweeteners, cocoa, salt, palm oil, and soybean oil), biotech (large molecule precision fermentation), bioindustrial, and global procurement and transportation. She also has experience in private practice supporting indenture trustees, companies, and investors in matters of corporate debt restructurings, bankruptcy and related litigation matters. Nicole’s pro bono representations have included advising clients in housing proceedings, immigration applications and renewals, advocating for a child placed in foster care, and a writ of mandamus veteran appeal seeking disability benefits. She is also actively involved as a pack cubmaster, a webelos co-den leader, and an assistant scoutmaster and has previously served in many other volunteer roles such as parent association president and law community service leader.
Nicole earned her Bachelor of Chemical Engineering with minors in Chemistry and Business from the University of Minnesota College of Science and Engineering. Her technical experience includes working for the Dow Chemical Company in its National Student Program Alternating Co-op during college and for General Mills in its Engineering Development Program after graduation. She earned her J.D. magna cum laude with a concentration in business law from University of Minnesota School of Law where she was a Symposium Editor for the Minnesota Law Review and her note was also published. After graduation, Nicole served as a judicial law clerk for the Hon. Roger L. Wollman of the United States Court of Appeals for the Eighth Circuit.
Nicole resides in Columbia, Missouri with her husband and their three children.
